Who said meals had to be boring when you are camping? I love the usual hamburgers and hotdogs but it’s always nice to switch things up a bit. This shrimp noodle bowl is easy to make on the campfire, it takes barely any time at all, AND its healthy as a bonus! This means you get to have an extra s’more! 😉 or maybe two!

You can make this shrimp noodle bowl while you are camping, but you can also make it at home using a regular or cast iron skillet.

Shrimp Noodle Bowl

  • 1/2 cup snap peas
  • 1/2 cup broccoli coleslaw
  • 1/2 cup red bell pepper
  • 1/2 cup shrimp
  • 1/4 cup fresh cilantro or parsley
  • 1/4 cup chopped peanuts

Gluten Free Peanut Sauce

  • 1/4 cup China Lily soy sauce
  • 1 tbsp worcestershire sauce
  • 2 tbsp honey
  • zest and juice of 1/2 a lime
  • 3 cloves finely shredded garlic
  • 2 tbsp garlic chilli sauce
  • 2 tbsp peanut butter powder
  • 1/2 cup water

Shrimp Noodle Bowl

In a cast iron skillet, sauté veggies in 2 tbsp of olive oil for 4-5 minutes or until crisp-tender. Season with salt and pepper. Add shrimp and cook for 3-4 minutes. Prepare rice noodles to package directions and add to skillet.

Gluten Free Peanut Sauce

Combine all ingredients in a bowl and whisk until combined. You may have to add more water, depending on the consistency you like. More water = thinner sauce!

Pour sauce over noodles and veggies and heat all ingredients together until hot.

Garnish with cilantro or parsley, a fresh lime wedge, and chopped peanuts.

Serves 4.
