Snack Pack’s move over! This recipe is so easy and quick, but tastes like you slaved away picking cacao beans all day. I’m telling you, it’s the best! Lick the bottom of the bowl, good. My grandma used to make this when I was little, and it has always been one of my childhood (okay, and adult) favourites. This recipe takes less than 10 minutes to make, and in a pinch you can spice it up for a quick impressive dessert. It would be a crime if you ever bought a Snack Pack again after making this. Enjoy!
- 3/4 cup skim milk powder
- 1/4 cup white sugar
- 3 tbsp cornstarch
- 3 (heaping ;)) tbsp cocoa powder
- 1 cup of warm water
- 1/4 tsp vanilla
- 2 tbsp butter or margarine
Mix all dry ingredients in a microwave safe bowl. Add water and whisk until combined (there may be clumps, but don’t worry). Microwave on high for 2 minutes. Stir. Microwave another 2 minutes. Repeat until you get the consistency you like. I usually microwave mine for a total of 6 minutes. Once you have the desired consistency, add in vanilla and butter. Stir until butter is melted and combined well. Serve warm or cover and cool. I like to add cream (eek, I know!) on top, or for a lighter option you could use low fat cool whip! Add some fresh raspberries or other fruit on top and you have a quick, impressive dessert in a pinch! Serves 4.
